As a Nova Scotian, I’ve eaten my fair share of lobster rolls, so I have some pretty strong opinions about what constitutes the best. I like the simple. The McLobster? I don’t hate it. For me, a lobster roll has to be on a buttered hot dog bun, potato bun, or roll. There’s no need for anything too fancy in the mix, and you just can’t skimp on the lobster. You want a lobster roll to have some weight in your hand. It’s a meal!
What You Need
PROTEIN
15-16 oz lobster (roughly 2 tails or one whole pinchy boy)
DRESSING
2 Tbsp mayo
1 Tbsp lemon juice
salt & pepper
chopped celery (optional)
BREAD
2 large potato buns (or your bun of choice)
butter
GARNISH
2 Tbsp shredded romaine lettuce
EQUIPMENT
big pot of boiling water
ice bath
lobster cracking tools or kitchen shears
skillet or toaster
How it’s done

COOK YER LOBSTER
Bring a large pot of water to a boil and salt liberally. Add lobster and boil about 8-10 min (shells should turn bright red). Once cooked, pull from water and plunge into ice bath until cool enough to handle.

PREP THE MEAT
Carefully crack your cooled lobster(s) and remove the meat from the shell. Once de-shelled, roughly chop the meat into bite-sized pieces.

ASSEMBLE THE INSIDES
Mix your roughly chopped cooked lobster meat with the lemon juice, mayo, salt and pepper (and celery, if you must).

WARM YER BUNS
Ideally, butter the bun all over and cook on both sides on a skillet. Less ideally, butter the inside and toast. Either will be delicious.

BRING IT ALL TOGETHER
Place a little shredded lettuce at the bottom of your bun (about 1 Tbsp per bun), fill it up with dressed lobster meat, and enjoy!
